Last Sunday, Cochon 555 stopped in Chicago on its 5th Anniversary Tour. Five of Chicago's best chefs accepted the challenge to create one-of-a-kind dishes using every part of the pig in their bid to become the "Prince of Porc."

Cosmo Goss of the Publican was the winner, and was officially crowned the “Prince of Porc.” Goss made a breakfast, lunch, dinner, and dessert menu. To begin, Goss served up a fantastic baked pork pancake, followed by pork loin tonnato, ‘nduja pudding, boudin noir, glazed pork belly, and churros & chocolate.

The event also included a butchering demonstration by Rob Levitt of The Butcher and Larder, as well as the “Punch Kings” mixology competition, won by Bar Manager and Chief Mixologist, Cristiana DeLucca, of The Drawing Room.
