September is geared towards becoming the busiest month
for chefs in Chicago! Kicking-off today and running throughout the month
take a look at what Chicago's top culinary masters have planned.
Bronzeville's Chef Clifford Rome and his partner, Eileen Rhodes, are inviting you to help celebrate their one-year anniversary tonight at H-Dogs! The eatery boasts delish (I'm a fan) gourmet fast food cooked creatively, fresh, and hot!
The fun starts at 6 p.m. and features gourmet bites, petite sweets, $1 craft beer samples and live music.
H-Dogs is located on the corner at 47th and King Drive (4655 S. King Drive). For more information check out their site at www.HDogsChicago.com.
The Berghoff is bringing Bravia to you in so many ways – through its 27th Annual Oktoberfest, the outdoor festival taking place from 11 am to 9 pm on September 12-14, 2012 at John C. Kluczynski Federal Plaza (corner of Adams and Dearborn) and during their month-long in-restaurant celebration kicking-off on September 6th and partying all the way through October 6th!
September 12th at 11:45am they’ll be tapping a keg to kick off the outside festival. A “prost” will be lead by their sponsors, followed by the beloved, German-style Johnny Wagner Band (then Wedding Banded at 5pm that night, Maggie Speaks on Thursday evening and Modern Day Romeos on Friday evening). Berghoff Catering and Restaurant Group’s Oktoberfest sponsors include: Time Out Chicago, K-HITS Radio, BMO Harris Bank, Berghoff Beer, Pepsi, Sysco, Kendall Jackson and Canyon Road. Proceeds from the event are going to the Mercy Home for Boys & Girls.
Chef Patricio Sandoval of Mercadito (108 W. Kinzie St.) will showcase his authentic Chile En Nogada dish on the Mercadito menu throughout the month of September leading up to a weekend of celebrations for Mexican Independence Day on Friday, September 14 through Sunday, September 16. Reservations are recommended and can be made by calling 312.329.9555.
Available the entire “Mes Patrio,” or patriotic month of September, guests can salute the flag of Mexico
with the Chile En Nogada ($20), a colorful green, white, and red
dish. Chile en Nogada is a traditional celebratory dish of stuffed
poblano pepper with ground pork, green apple, plantains, raisins, and a
creamy walnut-cinnamon sauce topped with pomegranate
seeds. Please see below for the complete recipe.
True to Mexican tradition where the excitement for Mexican Independence Day commences on the eve of the
holiday, Mercadito will also be hosting a late-night fiesta starting at 10 p.m. with a DJ on Saturday, September 15.
Guests can enjoy addition specialty menu items the entire weekend from Friday, September 14 through Sunday,
September 16 – such as Huarache Mexicano ($14), chile guajillo
with masa, black bean hash, cabbage, crema fresca, cotija cheese with a
choice of steak, chicken or pork al pastor or
La Patria cocktail ($11) of tequila, muddled orange, jalapeno and xocomole bitters.
Chipotle Mexican Grill has announced the two locations for
its Cultivate Food, Ideas & Music Festivals for 2012. Denver, the
burrito chain’s birthplace, will join Chicago this year in hosting a
Cultivate festival curated by Chipotle. Cultivate Chicago will be held
on Saturday, September 15 in Lincoln Park, and Cultivate Denver is
slated for Saturday, October 6 in the Meadow at City Park.
Chefs conducting cooking demonstrations throughout the day at both events are:
- Richard Blais (The Spence; HD-1; Flip Burger Boutique/Atlanta)
- Jon Shook and Vinny Dotolo (Animal; Son of a Gun/Los Angeles)
- Amanda Freitag (series “Chopped” and “Iron Chef America”)
- Zak Pelaccio (Fatty Crab/New York)

- Sarah Grueneberg (Spiaggia/Chicago)
- Danny Grant (RIA/Chicago)
- Chris Pandel (The Bristol; Balena/Chicago)
- Paul Kahan (avec; Blackbird; The Publican/Chicago)
Similar to last year’s Cultivate Chicago, both festivals will include an Artisan Tent offering a wide selection of local artisan-crafted foods for sampling and purchase, a Tasting Tent featuring local and specialty beers and wine, a Kids’ Tent with crafts and organic snacks, and various other activities to shed light on and spark discussion about contemporary food issues. Chipotle will also serve a selection of dishes based on its traditional menu and ingredients, but with a unique spin specially created for the Cultivate festivals, and offer select dishes from ShopHouse Southeast Asian Kitchen, the Asian concept it opened in Washington, D.C. last year.
Proceeds from the sale of beer and wine in the festival’s Tasting Tent will be donated to FamilyFarmed.org, a non-profit organization that works with family farmers and organizations that support them to build and expand local food systems.

Last Friday, 25 years after opening his famed Charlie Trotter’s
restaurant in Chicago, the renowned chef, author and philanthropist
closed his famed establishment.
He recently sat with Epicurious Editor-in-Chief ,Tanya Steel, to discuss his accidental entry into the
business, lessons from his father and partner, and his unlikely rise to food
fame.
· “I
guess you could say I’m an accidental restaurateur in that the family I
grew up in, there was no interest in food or going to restaurants, or
certainly fine dining restaurants.”
· “My
father was a very successful entrepreneur and everything my father did
turned to gold…so when we opened the restaurant together, he kept track
of the numbers, advised me how that all worked, and client response.”
· “The
greatest compliment we can ever get is when someone walks out saying,
‘Well, I was expecting a lot, but this succeeded my expectations,” and
that’s the whole objective.
